The below original recipe was developed and made for the 2015 California State Fair's Inaugural Cottage Food Operator SnackDown Baking competition.

Pretzel Peanut Butter Bars

Preheat oven to 350 degrees

For the crust you'll need a food processor:

1.5 c flour

1/2 c regular oats

3 c mini twist pretzel

1/2 c brown sugar

1 tsp baking powder

1 tsp salt

1.75 sticks of cold butter cut into cubes

Pulse to form a crumb, empty 2/3's of the mixture into the bottom of a 9 x 13 pan, press, set aside, and make your filling.

For the filling you'll need:

1/2 cream or milk

1 can evaporated milk

1/3 to 1/2 c brown sugar

1.5 c peanut butter

3 egg yolks

3 tbs cornstarch

4 tbs melted butter

Mix your cornstarch with the cream to form a slurry.  Add the remaining ingredients to your slurry and mix until smooth.  Pour onto crust.  Use the remaining 1/3 crust mixture and sprinkle it on top of your filling.

Bake 35 to 40 minutes, or until knife inserted in center comes out clean, let cool, and cut into bars.

Yeah, it's got butter and cream, but that's what makes it taste so good.
